Reducing Food Waste!

Today in Castle Douglas we were delighted to receive a huge donation of food from the local Co-op and their Community Champion Ruth, of products that were reaching their sell-by date and would otherwise go to waste.

As part of our accredited environmental course, supported by the Holywood Trust, we have been researching food waste, and how to prevent it. After researching things, we could do with food that is reaching the end of its usability, the group decided that they would treat the team to a lunch made by our young people. From their research, the young people decided to make soup for the group’s lunch, from Jack Monroe’s Back of The Fridge Soup recipe. This recipe makes use of what you have and just gives you recommendations for use of stock and how to make soup with whatever is leftover in your fridge. From our trolley of leftover food, the group made a delicious and hearty vegetable soup! And toasted the leftover sour dour bread we had received to go with it.

However, we still had food to spare. We divided as much of the remaining food as we could with people taking home vegetables and bread to have for their tea, and with what was left the group decided to give some treats to Kristin’s guinea pigs, and vegetables went over to Fairhill Services Ltd for some of their animals.

We will be continuing our work on food waste in the coming weeks and will hopefully be taking some other preventative measures!
